Gluten free corn casserole
Isn’t it true that everyone has that one recipe that stays with them for years?
A nostalgic recipe that brings back childhood memories.
Well, my nostalgic recipe is corn casserole.

I got this recipe from a friend of my parents, who was a chef at the time. He gave it to me when I was just 10 years old.
Since then, it’s been a family favorite for years, just as it is, without any changes, and my kids love it too.
The casserole turns out soft, flavorful, and naturally gluten-free.
Not because I changed anything in the recipe, but simply because there’s no flour in it. Instead, it uses cornstarch, which is part of what gives it that soft, tender texture.
My tip: double the recipe in advance, otherwise it will disappear in one meal.

Tips and tricks:
- You can use any semi-hard cheese you like, such as Gouda, Cheddar, or similar
- Instead of sour cream, you can use plain unsweetened yogurt
- You can also substitute the sour cream with white cheese, but in that case, it’s best to add a little milk so the mixture is smoother and easier to mix
